Description: Saké rice is unique in that its starches are concentrated at the center of the grain. The brewing process begins with milling, or “polishing,” the rice to remove fats and proteins. The more the rice is polished, the cleaner, lighter, fruitier, and more refined the saké becomes. Most Junmai saké is made using rice polished to 70% or less of its original size. Joto Junmai, crafted by the Eiko Fuji Brewery under the leadership of the 13th generation of the Kato family, stays true to the classic Junmai style with its rich and robust character, while also offering a clean, fruity, and approachable quality.
