• Dry gin produced in San Juan del Río, Querétaro, Mexico, at La Insoportable Cervecería y Destilería • Maestro Destilador Andrés Valverde • Base spirit made from 100% sustainably sourced Mexican corn, distilled in Guadalajara • 32 total botanicals; traditional gin botanicals include juniper, coriander, angelica root, and licorice complemented by endemic botanicals featuring epazote, marigold, Mexican oregano, lime peel, damiana, night-blooming jasmine (Cestrum nocturnum), and avocado leaf • Distilled using a 300-liter alembic copper pot still; botanicals are first macerated in corn distillate before they are vapor-infused via basket • Classic opening aromatics of juniper, citrus zest, and coriander are followed by palo santo, rosemary, and mango skin; the palate has a full, silky texture with delicately sweet notes of whole green apple underscored by woody tannin with pine resin, jasmine, and a subtle saline note of the seaside on the finish • Small batch production; each bottle is hand numbered and dated • 50% ABV Conjuring feelings of forest, sea, and orchard all at once, this dry gin brings the structure one needs to a classic gin cocktail while imparting its own distinct character. Try in a dry Martini for a unique sensory experience but don’t stop there: Pair with Fino or Manzaniila sherry in bespoke mixtures, or with lush fruit-forward liqueurs or tonics to perfectly highlight this gin’s herbaceous tannin.
