In late October of 2019, Weldwerks Co-Founder and Head Brewer Neil Fisher paid us a visit to brew Street Bits IPA in Canton and this viscous imperial stout on our 10bbl system at Trillium Fort Point. Inspired by their renowned Medianoche, we employed a massive, complex grain bill and an extended boil built for a year's rest in Neil's favorite type of spirit barrels: Bourbon. After racking out of barrels, we conditioned the final blend on select Barrington and Mostra coffee.
In the glass, Barrel-Aged PM Noche presents dark as its name suggests, with its deep black color emitting almost zero light. The robust coffee addition fills the room with enticing roastery aromas. Notes of dark chocolate, toasted hazelnut, espresso, and caramelized dark fruit prepare the palate for a luxurious drinking experience. It's rich and velvety mouthfeel provides structure for a well-integrated sweetness, bright bourbon highlight, and slightly warming finish.
